Ingredients:
- 4 egg yolks
- 100 g sugar
- 500 ml milk
- 200 ml heavy cream
- 10 g gelatin (or 5 sheets of gelatin)
- 300 g fresh strawberries (or frozen)
- 2 tablespoons lemon juice
- Optional: 1 teaspoon vanilla extract

If you are using granulated gelatin, place it in a small bowl with 50 ml of cold water and let it hydrate for 10 minutes. If you are using gelatin sheets, soak them in cold water for 5-10 minutes, then squeeze them well.

In a bowl, whisk the egg yolks with the sugar until the mixture becomes light in color and doubles in volume. Gradually add the milk, stirring continuously. Place the mixture in a saucepan and heat it over a double boiler. Stir constantly until it thickens slightly, about 10-15 minutes.

Step 3: Incorporating the gelatin
When the cream is ready, remove it from the heat and add the hydrated gelatin. Mix well to ensure it dissolves completely. Let the mixture cool to room temperature.

Step 4: Preparing the whipped cream
In another bowl, whip the heavy cream until it becomes firm. It is essential not to overbeat it to avoid separation. If desired, you can add vanilla extract for extra flavor.

This is mixed with the egg yolks, then whipped cream is added and mixed gently. Half of the mixture is placed in a mold, then whole strawberries are placed upside down, the rest of the cream is added, and strawberry slices are inserted into the edges, also upside down. Chill for a few hours, preferably overnight. Turn it out onto a platter and decorate, in my case with strawberries and chocolate. I used fewer strawberries (I cut them in half for the cream as I didn't have enough) because they were horrifically ugly; from 2 kg, I barely picked 1 kg. It is served sliced after being chilled.
