Berry Bavarian is a quick and simple dessert, perfect for ending a festive meal or for treating loved ones on an ordinary day. This recipe combines the delicacy of a fine cream with the intense flavors of berries, creating a refined yet accessible delight. Follow the steps below to achieve a perfect Bavarian, with a velvety texture and irresistible taste.

Ingredients:

- 750 g of berries (raspberries, blackberries, blueberries, or a mix)
- 150 g sugar
- 17 g gelatin (about 2 sheets or 1 packet)
- 300 ml heavy cream (with a minimum fat content of 30%)
- 200 ml milk
- 3 egg yolks
- 1 teaspoon vanilla extract (optional)
- A pinch of salt

Preparation instructions:

1. Preparing the berries: Wash the berries well under cold running water and let them drain. If using frozen berries, let them thaw and drain the juice.

2. Making the fruit puree: In a medium saucepan, add the berries and 50 g of sugar. Cooking over medium heat will help dissolve the sugar and release the fruit juice. Stir gently for about 5 minutes until the berries are soft. Use a blender to turn the mixture into a fine puree. Strain the puree through a sieve to achieve a smooth texture, removing the seeds.

3. Preparing the gelatin: In a small bowl, hydrate the gelatin in 50 ml of cold water for 5-10 minutes, according to the package instructions. Then, heat the gelatin in a double boiler or microwave, stirring until completely dissolved.

4. Creating the Bavarian cream: In a saucepan, add the milk, egg yolks, the remaining sugar (100 g), and a pinch of salt. Cook over low heat, stirring constantly, until the mixture thickens and reaches a temperature of 80°C. It is important not to boil, to prevent the eggs from curdling. Add the dissolved gelatin and fruit puree, mixing well to combine the flavors.

5. Whipping the cream: In a separate bowl, whip the heavy cream until it forms stiff peaks, but not overly whipped. Fold the cream into the fruit mixture with a spatula, using gentle up-and-down movements to maintain airiness and achieve a fluffy texture.

6. Chilling: Pour the mixture into individual molds or a serving dish and refrigerate for at least 4 hours, or until the Bavarian sets.

Serving and variations:

To add a personal touch, you can decorate the Bavarian with some fresh berries or a caramel sauce. You can also experiment with flavors by adding a splash of fruit liqueur or almond essence to the cream mixture. Instead of berries, you can use mango or pineapple puree for a tropical variation.

This berry Bavarian is not only a delicious dessert but also a true culinary masterpiece, perfect for impressing guests. Enjoy every spoonful of this delicacy and savor the combination of textures and flavors!
