Bobotie, sweet-and-savory meat bake

Bobotie is a sweet-and-savory meat bake that combines beef and pork with dried fruit under a browned egg topping. The filling stays soft and spiced, with a thin crust that sets on top. I prefer medium-ground meat to keep some texture in the filling. Prep: 20 minutes. Cook: 55 minutes. Rest: 10 minutes. Total time: 85 minutes. Servings: 4. Approximately 680 kcal and 40 g protein per serving.

Ingredients

  • 50 g white bread
  • crusts removed
  • 200 ml milk
  • 1 large onion (150 g)
  • 1 garlic clove
  • 2 tablespoons olive oil
  • 300 g ground beef
  • 300 g ground pork
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon gingerbread spice mix
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon ground turmeric
  • 15 g chopped fresh parsley
  • 40 g raisins
  • 40 g dried apricots
  • 20 g sliced almonds
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 4 eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper

Preparation

1. Tear the bread into pieces and leave it to soak in the milk. 2. Peel and finely chop the onion and garlic. Heat the oil in a large frying pan, add the onion and garlic, and cook for 5 minutes, until softened and lightly colored. 3. In a bowl, mix the beef and pork with the coriander, cumin, gingerbread spice mix, ginger, curry powder, turmeric, chopped parsley, and well-squeezed bread. Set the milk aside. Add the mixture to the pan, then add the raisins, chopped dried apricots, and sliced almonds. Cook for 10 minutes, until the meat is browned and no liquid remains in the pan. 4. Season the mixture with 1 teaspoon salt and 1/2 teaspoon pepper. Transfer it to an oiled 30 × 20 cm baking dish and press it down. 5. Beat the eggs with the reserved milk, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Pour over the meat and bake for 40 minutes at 180°C, until the egg layer is set and lightly browned. Let it stand for 10 minutes before serving; you can serve it hot or cold.

Notes

You can replace the pork with the same amount of lamb, or use 50 g gluten-free bread. Regular bread contains gluten, and the milk, eggs, and almonds are allergens in this dish. Bobotie keeps in the fridge for up to 3 days; you can bake it a day ahead and reheat the portions. Choose medium-ground meat, not a fine paste, for a filling with some texture. A 30 × 20 cm dish gives the bake a suitable thickness; in a smaller, deeper dish, the center may need a few extra minutes. If the dried fruit is tough, chop the apricots into small pieces and leave the raisins whole. Serve with basmati rice, hot or cold.

Frequently asked questions

Can I use only beef?

Yes, use 600 g ground beef; the baking time stays the same.

What should I do if the egg layer still jiggles after baking?

Leave the dish in the oven for 5 more minutes at 180°C, until the top is set.

What can I use instead of dried apricots?

Add another 40 g raisins; the filling will taste sweeter, without pieces of apricot.
