Soutzoukakia (Greek Meatballs in Sauce)

The first step is to soak a piece of bread in water, then squeeze it well to remove the excess liquid. This will help achieve a soft and juicy texture for the meatballs. Once the bread is prepared, add it to the minced meat along with the crushed garlic, cumin, salt, and pepper. Mix all the ingredients well, ensuring they combine evenly. Then, form small rolls about 6 cm long and 1.5 cm thick. These meatballs will develop a delicious crust once fried. Coating them in flour will give them a crispy texture, so don’t skip this step. For frying, you have the option of using a pan with oil or, for a healthier version, baking them in the oven. Pour over them water mixed with tomato juice, ensuring they are well covered. Let simmer over moderate heat for 20-30 minutes, either on the stove or in the oven, so that the flavors meld perfectly. When the meatballs are ready, serve them hot, alongside a side of rice or mashed potatoes, and don’t forget to add a fresh salad.
