Pork stew with pepper paste

Pork stew with pepper paste gets its distinctive flavor from the pepper paste: the pork neck is browned first, then simmered with two additions of sauce. With onion, carrot, tomato paste and thyme, the meat softens in a red sauce thick enough to serve with polenta; this pork stew is reminiscent of a simple everyday stew. I serve it with polenta and pickled gherkins. Prep: 15 minutes. Cook: 67 minutes. Total time: 82 minutes. Serves: 3. Approximately 550 kcal and 32 g protein per serving.

Ingredients

  • 550 g pork neck
  • 2 medium onions (300 g)
  • 1 small carrot (70 g)
  • 40 g red pepper
  • 4 garlic cloves
  • 500 ml water
  • 2 tablespoons tomato paste
  • 1 tablespoon pepper paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/8 teaspoon hot paprika

Preparation

1. Pat the pork neck dry with paper towels and cut it into cubes about 2.5 cm across. Brown them in a hot pan over high heat for 10 minutes, turning them, until they take on some color. 2. Finely chop the onion, carrot and red pepper. Add them to the meat and cook for 10 minutes over a lower heat, stirring, until softened. 3. Crush the garlic and add it to the pan. Cook for 2 minutes, until you can smell the garlic. 4. Pour in 250 ml water, cover the pan and simmer for 15 minutes. 5. In a separate bowl, mix the remaining 250 ml water with the tomato paste, pepper paste, thyme, dried parsley, salt, pepper and hot paprika. Pour the mixture over the meat and stir. Cover and simmer over medium heat for 30 minutes, stirring from time to time. Taste and adjust the salt if needed.

Notes

Served with polenta and pickled gherkins, it has the feel of an everyday stew; mashed potatoes can stand in for the polenta. Choose pork neck with a little fat between the muscle fibers, not a completely lean piece. Cubes larger than about 3 cm may need another 5-10 minutes of simmering, until tender. The sauce keeps in a sealed container in the fridge for up to 3 days. You can leave out the hot paprika, and if the sauce seems too thin, simmer it uncovered for a few minutes.

Frequently asked questions

Can I use pork leg instead of pork neck?

Yes, use 550 g and cut the meat into cubes about 2 cm across. Pork leg is leaner, so check whether it has become tender after 40 minutes of simmering.

Can fresh parsley replace dried parsley?

Yes. Add 1 tablespoon of chopped fresh parsley during the last 5 minutes of simmering.

Why is the meat still tough after simmering?

Keep it over low heat for another 10-15 minutes, with the lid on. If the liquid has reduced a lot, add 50 ml hot water.
