Stuffed Pancakes
To prepare the stuffed pancakes with meat and telemea cheese, we start by preparing the dough. We take a blender and add the 10 tablespoons of flour, the eggs, the yeast, and the salt. These ingredients are essential for obtaining a uniform and tasty composition. We start mixing at maximum speed, gradually adding mineral water, being careful to achieve a fluid consistency, but not too liquid, specific to pancake dough. When we reach the desired texture, we add the 50 ml of oil to the mixture, which will make the pancakes more tender.
After the dough is well homogenized, we heat a non-stick pan, being careful not to add oil, as the pancakes will cook perfectly without it. Using a ladle, we pour the dough into the pan, forming the pancakes. We cook each pancake for a few minutes on each side until they become slightly golden. From this amount of dough, we should obtain about 20 pancakes, enough to satisfy everyone's appetite.
In the meantime, we take care of the filling. We finely chop the onion and bell pepper, and then sauté them in a pan with about 100 ml of hot oil. This step will add a flavorful taste to our dish. After the onion becomes translucent, we add the minced meat, seasoned with salt and pepper to taste. If you want a bit of color and flavor, feel free to add a tablespoon of pepper paste or, in its absence, a mix of spices for gulyás. We mix everything, and when the meat is well sautéed, we add enough water to cover the ingredients. We let it simmer on low heat until the water reduces and a thicker sauce forms.
When the sauce is ready, we add the telemea cheese, grated on a fine grater, which will melt easily and thicken the mixture even more. Now we are ready to fill the pancakes! We take one pancake, add a generous portion of the filling, then roll it carefully, making sure to fold the ends to prevent the filling from leaking out. After all the pancakes are filled, we pass them through flour, beaten egg, and then breadcrumbs to give them a crispy crust.
The pancakes are baked in hot oil until they become golden and crispy. They are served hot, alongside garlic sauce, tartar sauce, or any other preferred sauce. These stuffed pancakes with meat and cheese are ideal for a delicious dinner, but also to impress guests. Enjoy them with pleasure!
