Octopus salad (polpo)
Octopus is a versatile and delicious ingredient that can transform any meal into a memorable culinary experience. We start by cleaning the octopus, ensuring that we remove all impurities and membranes covering it. This step is essential to enjoy its delicate texture and rich flavor. After preparing the octopus, we place it in a large pot, where the water has already begun to boil. We add a teaspoon of salt, which will help enhance the flavors, and cover the pot with a tight lid.
We let the octopus simmer on low heat for 40 minutes. It is important not to lift the lid during this time, as the steam that forms inside helps tenderize the meat. After 40 minutes, we let the octopus continue to cook in the steam for another hour, which will ensure an extremely soft and juicy texture. During this time, we can prepare the garnish. We cut the carrots and celery into sticks, making sure they are of uniform size for even cooking. These vegetables will add not only a sweet flavor but also a splash of color to the plate.
Once the octopus is ready, we carefully remove it from the water and let it cool slightly. Then, we cut it into pieces of varying sizes, according to personal preference. In a large bowl, we combine the pieces of octopus with extra virgin olive oil, salt, pepper, and freshly squeezed lemon juice, adjusting the seasonings to taste. We then add the cut carrots and celery, along with green or black olives, depending on preference. The whole garlic will provide a subtle flavor to the dish but can be easily removed if not desired. We finish the dish with a generous sprinkle of chopped parsley, which will add a touch of freshness and color.
