Appetizers - Meatballs in Beer Batter by Aglaia C. - Recipia
To prepare the delicious meatballs, start by carefully mixing all the necessary ingredients. It is essential to combine them well to achieve a homogeneous mixture, and the taste should be balanced. Add salt and pepper to taste, being careful not to overdo it, so that the flavors complement each other perfectly. With wet hands, form between 16 and 20 meatballs, making sure to give them a round and even shape. They will wait to be integrated into the dough, so set them aside.

To prepare the dough, start by adding the ingredients to the bread machine in the correct order. The oil should be first, followed by the beer in which you have dissolved the sugar and salt. These two ingredients will provide a pleasant taste and a soft texture to the dough. Then, add the sifted flour, ensuring that no lumps remain, and finally, the dry yeast. If you prefer fresh yeast, mix it beforehand with the sugar and dissolve it in a little of the beer from the total amount.

Set the program for preparing the dough and let the machine do its job. If you do not have a bread machine, do not worry. In a large bowl, place the sifted flour and add the dry yeast, sugar, and oil. Start pouring in the beer gradually, stirring constantly. When the dough begins to form, incorporate the salt and continue kneading until you obtain a smooth and elastic dough that easily detaches from your hands and the bowl.

After kneading the dough, place it in a bowl greased with a little oil, cover it with a clean towel, and let it rise in a warm place until it doubles in volume. This step is crucial to obtain a fluffy and tasty dough. Once it has risen, remove the dough onto a work surface and roll it out to a thickness of about 0.5 cm. Cut the dough into 16-20 squares or rectangles of suitable size.

In the middle of each square, place a meatball, then close and round the dough to form balls. Carefully transfer them to a heat-resistant dish that you have previously lined with butter and sprinkled with flour. Let them rise again for 20-30 minutes in a warm and draft-free place.

For a golden and appetizing appearance, brush each ball with a lightly beaten egg yolk mixed with a tablespoon of milk or water, then sprinkle cumin seeds on top. Preheat the oven to 180 degrees and bake the meatballs for about 35-45 minutes, or until they become browned and well-cooked. Serve them warm, either plain or with a spicy sauce or homemade ketchup. These meatballs are just as delicious cold, making them a perfect choice for any occasion!
