Grilled vegetable stew 2

Grilled vegetable stew 2 brings together eggplant, tomatoes and peppers cooked on the grill, then combines them with boiled yellow beans. The vegetables soften and pick up browned spots, with a cold sour cream and grated cucumber sauce served on the side. I grate the cucumber on the fine side of the grater because I prefer a smooth sauce without big pieces. Prep: 20 minutes. Cook: 22 minutes. Total time: 42 minutes. Serves: 4. About 120 kcal and 4 g protein per serving.
Ingredients
- 150 g yellow beans
- 1000 ml water
- 2 small eggplants (400 g)
- 2 tomatoes (250 g)
- 4 hot peppers (40 g)
- 1 green pepper (150 g)
- 1 1/2 teaspoons salt
- 1/2 teaspoon ground pepper
For the sauce
- 100 g sour cream
- 20% fat
- 2 garlic cloves (6 g)
- 1 small cucumber (100 g)
Preparation
1. Rinse the vegetables. Peel the eggplants and slice them, slice the tomatoes, remove the seeds from the green pepper and dice it, then chop the hot peppers. Trim the ends off the beans and break the pods in half. 2. Sprinkle the eggplant with 1/4 teaspoon salt and 1/8 teaspoon pepper. Season the tomatoes with 1/4 teaspoon salt and 1/8 teaspoon pepper, and the green pepper with 1/4 teaspoon salt. 3. Heat a stovetop grill and brown the eggplant, tomatoes, hot peppers and green pepper in batches, about 12 minutes in total. Turn the vegetables once, until browned spots appear on both sides, then put them on a plate. 4. Boil the beans in 1000 ml water with 1/2 teaspoon salt for 10 minutes, until tender. Drain the water and toss the beans with the browned vegetables. Season with 1/4 teaspoon salt and 1/4 teaspoon pepper. 5. Peel and grate the garlic. Mix it with the sour cream and peeled, grated cucumber, then add 1/4 teaspoon salt and 1/4 teaspoon pepper. Serve the sauce alongside the vegetables.
Notes
You can replace the sour cream with 100 g Greek yogurt; both are dairy. Keep the sauce separate from the vegetables in the fridge for up to 3 days. Small, firm eggplants brown more evenly; if they're thick, leave them on the grill longer, and if they have lots of seeds, remove the soft center. I time my prep around mealtime and make the sauce while the beans boil; the slices need time to pick up color, so don't turn them right away. Serve the stew with bread; the photos came out less well because of the time they were taken.
Frequently asked questions
Can I use a kapia pepper instead of the green pepper?
Yes, use one kapia pepper weighing about 150 g and brown it for about 4 minutes on each side, until softened.
What should I do if the cucumber sauce turns out watery?
Leave the grated cucumber in a sieve for 5 minutes before mixing it with the sour cream, then discard the liquid that collects underneath.
Why are the beans still tough?
Boil them for another 3-5 minutes and taste a pod; more mature beans may need extra time.
