Oven-roasted potatoes with roasted pepper sauce

Oven-roasted potatoes with roasted pepper sauce brown lightly, while the centers stay soft. The thick sauce made with roasted kapia pepper, garlic, tomato and yogurt settles between the pieces and coats some of them, leaving red patches between the browned edges; I prefer to keep it thick so it clings to the potatoes instead of pooling at the bottom of the plate. Prep: 20 minutes. Cook: 43 minutes. Total: 63 minutes. Serves: 4. Approximately 420 kcal and 7 g protein per serving.
Ingredients
For the potatoes
- 50 g butter
- 45 ml olive oil
- 1 kg potatoes
- 1 teaspoon salt
- 1 teaspoon rosemary
For the sauce
- 1 large roasted kapia pepper
- 1/2 chili pepper
- 1 head garlic
- 1 tomato
- 100 g creamy yogurt
- 1 teaspoon balsamic vinegar
- 1 teaspoon olive oil
- 1 tip of a teaspoon sweet paprika
- 1 tip of a teaspoon ground pepper
- 1/4 teaspoon salt
To serve
- 10 g fresh parsley
Preparation
1. Melt the butter over low heat for 3 minutes, until liquid. Take the pan off the heat and stir in the oil. 2. Peel and wash the potatoes, cut them into pieces about 4 cm across and pat them dry with a towel. Sprinkle them with 1 teaspoon of salt and the rosemary. 3. Grease the baking tray with half the butter and oil mixture. Arrange the potatoes on it, brush them with the remaining mixture and bake at 180°C for 40 minutes, until lightly browned and soft in the middle. 4. To make the sauce, put the roasted kapia pepper, torn into pieces, the chili pepper cut into rounds, peeled garlic, tomato, yogurt, balsamic vinegar, olive oil, paprika, pepper and 1/4 teaspoon of salt in a blender. Blend until smooth. 5. Turn off the oven and transfer the potatoes to a serving dish. Add the sauce and chopped parsley.
Notes
For a dairy-free version, replace the butter with 45 ml oil and the yogurt with 100 g plain plant-based yogurt; the standard version contains dairy. Store the potatoes and sauce separately in the fridge for up to 3 days. I’d spread Oana’s sauce on bread too, but I save it for the potatoes and grilled steak, and time the oven so it’s ready along with the steak. Potatoes of a similar size roast more evenly; floury potatoes have softer centers, while waxy ones hold their shape better.
Frequently asked questions
Can I use a red bell pepper instead of kapia?
Yes, roast one large red bell pepper and use it instead of the kapia. The sauce may be a little runnier.
How can I tone down the heat in the sauce?
Blend only a quarter of the chili pepper and remove its seeds before adding it.
Why do the potatoes stay pale?
Leave about 1 cm between the pieces on the tray. When they’re packed too closely, they steam and take longer to brown.
