I often make potato patties with telemea when I feel like having something meatless, especially if I have good cheese in the fridge and some potatoes of the right size. The recipe isn’t complicated and doesn’t keep you in the kitchen for too long, so I’ve made it many times when I didn’t have anything else planned. Wash the potatoes well and peel them. 2. Place them in a pot, cover with water, and add a tablespoon of salt. Let them boil, but not too much – they should be cooked but not falling apart. 3. Once cooked, drain them well and let them cool a bit. 4. Grate the telemea on a large grater. 5. Grate the boiled potatoes as well. 6. In a large bowl, combine the grated potatoes, add the two eggs, and mix. 7. Add the grated telemea, granulated garlic, salt (if needed, depending on how salty the cheese is), pepper, vegeta, and breadcrumbs. 8. Mix everything until the composition is homogeneous and the breadcrumbs are no longer visible. It should bind together so you can shape the patties. 9. Heat oil in a pan (it doesn’t need to be too much, just enough to cover the bottom of the pan). 10. Take a small amount of the mixture in your palm, form a ball, then gently flatten it for the classic patty shape. 11. When the oil is hot, add the patties to fry. Turn them on both sides until they are nicely browned. 12. Remove them onto an absorbent paper towel to drain the excess oil. 13. After you finish all the mixture, let them cool a bit before serving. Why I make this recipe often These patties are quick and don’t require complicated ingredients. They taste good both warm and cold, and can also be taken to go. Plus, it’s one of the few meatless recipes that even those who usually wouldn’t touch a veggie patty enjoy. Tips and variations Tips If you find the mixture too soft, add another tablespoon of breadcrumbs. If it’s too dry, you can add a small egg or a few drops of water. Don’t boil the potatoes too much – they should stay firm enough for grating. Taste the mixture to avoid adding too much salt, especially if the telemea is already salty. Substitutes Cow telemea can be replaced with sheep or goat telemea if you prefer a stronger flavor. Granulated garlic can be replaced with fresh crushed garlic, but no more than 1-2 cloves, so it doesn’t overpower the other flavors. Yes, but the texture won’t be as crispy as when fried. If you want to avoid frying, brush the patties with a little oil and place them on baking paper at 200°C for 20-25 minutes, turning them halfway. What can I substitute for eggs for a vegan version? You can try a little chickpea flour mixed with water, but the mixture needs to be adjusted to bind well. Telemea can be replaced with firm tofu, but the taste will be different. What type of telemea is the best? Cow telemea is milder in taste and works well, but you can use any type of telemea, just make sure it’s not too dry.
