Savory chicken liver cake

Savory chicken liver cake: puréed livers are baked with vegetables, mushrooms and smoked bacon, then topped with melted cheese and have a firm, compact center. I look for shiny livers without greenish spots; once cooled, the cake slices like a savory loaf, with the chopped vegetables visible, and takes its place on the Christmas appetizer platter. Prep: 25 minutes. Cook: 40-45 minutes. Rest: 105-110 minutes. Total time: 170-180 minutes. Serves: 8. Approximately 245 kcal and 17 g protein per serving.
Ingredients
- 500 g chicken livers
- 250 ml milk
- 2 carrots
- 3 spring onions
- 1/2 green pepper
- 1/2 red pepper
- 100 g mushrooms
- 100 g smoked bacon
- 5 cloves garlic
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 3 heaped tablespoons flour
- 15 g dill
- 15 g butter
- 50 g semi-hard cheese
Preparation
1. Trim the membranes from the livers, pat them dry with paper towels and leave them to soak in a bowl with 250 ml milk for 1 hour. Drain well. 2. Peel and finely chop the carrots, spring onions, green pepper, red pepper, mushrooms, smoked bacon and garlic. 3. Purée the livers in a food processor until smooth, then transfer to a bowl. Add the chopped vegetables, bacon and garlic, then mix. Add 1 teaspoon salt and 1/2 teaspoon ground pepper. 4. Fold in the flour and chopped dill, then mix until smooth. Refrigerate the mixture for 15-20 minutes. 5. Heat the oven to 180°C. Grease an ovenproof dish with 15 g butter, pour in the mixture and bake for 35-40 minutes, until the center is set. 6. Remove the dish, grate the cheese over the top and return it to the oven for 5 minutes, until melted. 7. Leave the dish to cool in the pan for 30 minutes, then remove it and cut into slices.
Notes
Small, shiny livers without greenish spots are easier to trim. If the dish is deep, the center may need the full baking time; in a wider dish, the cake will be thinner. Pat the mushrooms dry after rinsing so they don't add water to the mixture. You can replace the bacon with 100 g cooked ham for a less smoky flavor. The dish contains gluten from the flour and dairy from the milk, butter and cheese. Keep covered in the refrigerator for up to 3 days. For a festive platter, you can garnish it with cucumber, tomato, olives and radishes; I serve it with a green salad.
Frequently asked questions
Can I use turkey livers?
Yes. Cut them into pieces of about 2 cm before puréeing them in the food processor.
Can I use canned mushrooms?
Yes, use the same amount and leave them to drain for 10 minutes before chopping.
What should I do if the center is still soft?
Put the dish back in the oven at 180°C for another 7 minutes, then check whether the center has set.
