Pasta with meat (Pastitada)

To prepare a delicious and aromatic dish, we start by choosing quality meat, such as pork or beef. This will bring a rich flavor to the dish. We cut the meat into suitable pieces, each the size of a bite. In each of these pieces, we make a small incision and insert a slice of fresh garlic. This technique will ensure that every bite is full of flavor. In a deep pot, we heat the olive oil, preferably over medium heat. We add finely chopped onion, which will turn golden and release delicious aromas into the oil. Once the onion becomes translucent, we add the pieces of meat and let them brown lightly, stirring occasionally, so they brown evenly on all sides. After the meat is sealed, we add a glass of dry white wine, which will add depth to the sauce. We let the wine boil for a few minutes until the alcohol evaporates and the flavors concentrate. The next step is to add tomatoes, whether fresh or canned, diced. These will contribute to creating a rich and savory sauce. We season the dish with cinnamon, cloves, bay leaves, salt, and pepper to taste. These spices will provide a complex flavor, full of nuances. We then add two glasses of water, letting everything simmer on low heat. It is important to periodically check the consistency of the sauce and, if necessary, to add water to ensure we have enough sauce at the end. While the meat is cooking, we take care of the pasta. We boil the pasta according to the instructions on the package, making sure they are al dente. Once the sauce has boiled sufficiently and the meat is tender, and the sauce has thickened, we are ready to serve. On plates, we add a generous layer of pasta, on top of which we place the meat with the aromatic sauce. To finish the dish, we sprinkle grated cheese on top, which will melt slightly from the heat of the food. This dish will not only delight the taste buds but will also spread inviting aromas throughout the house. Enjoy your meal!
