Beans are an essential ingredient in many traditional recipes, and preparing a delicious bean soup not only satisfies hunger but also brings a sense of well-being. We start by washing the beans thoroughly, ensuring that we remove any impurities. After cleaning the beans, we trim the ends and chop them into small pieces, about 2 cm, for even cooking. Next, we focus on the fresh vegetables: bell pepper, tomatoes, and onion. These should be washed carefully, after which we chop them finely, preparing them to add flavor to the soup.

Bacon, with its unmistakable aroma, is the next ingredient on our list. We slice it thinly, and the carrots, after being washed and peeled, are grated on a grater to add sweetness and a pleasant texture to our soup. In a soup pot, we put the oil and sliced bacon, letting it fry over medium heat. It is important to watch it closely until the bacon becomes crispy and releases its fat, and its aroma spreads throughout the kitchen.

Once the bacon has turned golden, we add the finely chopped onion. We let it fry until it becomes translucent, at which point we add the grated carrots. This combination of ingredients will sauté together for a minute, allowing the flavors to blend. Next, we add the chopped beans, bell pepper, and tomatoes, then pour in water or chicken or beef broth, depending on our preferences. We let everything boil, and the aroma will become irresistible.

As the beans cook, it is good to check how soft they are. After about 30 minutes, we can add salt, pepper, and paprika, adjusting the spices to our personal taste. We let the soup simmer a little longer to ensure all the ingredients are well integrated. When we are satisfied with the consistency and aroma of the soup, we turn off the heat and remove the pot from the stove.

The final step is to wash and finely chop the fresh parsley, which we add to the soup, giving it an extra touch of freshness. This bean soup is best served with a generous spoonful of sour cream, which adds a special creaminess and pairs perfectly with the intense flavors of the ingredients. We enjoy savoring it from bowls or plates, as we believe this way of serving enhances the taste and adds a special charm to the meal. And if we also have a piece of warm bread on the side, the delight is complete! It's impossible to stop eating!

Ingredients

500 g yellow wax beans, 3 tomatoes, 2 bell peppers, 3-4 onions (if they are larger, just 2), 6 strips of bacon, salt, pepper, and sweet paprika, a tiny bit of hot paprika (not much, just what you can take on the tip of a toothpick), fresh parsley, 2 carrots, sour cream for serving, 2 tablespoons of oil (I used coconut oil)
