Vegetable Salad with Fresh Herbs
We start preparing this delicious vegetable soup by washing, peeling, and chopping the vegetables. It is important to ensure that the vegetables are fresh and of high quality, as the choice of ingredients will significantly influence the final taste of the soup. Carrots can be sliced into rounds, potatoes into cubes, bell peppers into strips, and zucchini can be cut into small pieces to cook evenly. The onion can be finely chopped to incorporate well into the soup.
In a tall pot of at least 4 liters, we bring water to a boil, being careful not to add too much to avoid diluting the flavors. We start adding the vegetables in the correct order, considering the cooking time of each vegetable. We begin with the carrots, which require a longer cooking time, followed by the potatoes, then the bell peppers and zucchini, and finally, the onion. Between each addition, it is good to take a break of about 10 minutes so that the vegetables cook evenly and release their aroma into the soup.
Once all the vegetables are cooked and can be easily pierced with a fork, we will add the vegetable mix for soups, which contains carrot, parsley, parsnip, and celery, all finely chopped. This mix will bring extra flavor, and the salt in the composition will help intensify the taste of the vegetables in the pot. After adding the vegetable mix, it is time to incorporate the warm whey, which will enrich the texture of the soup and add a pleasant layer of acidity.
We let the soup come to a boil 2-3 times, and then we focus on the taste. It is essential to adjust the taste with salt and pepper so that each spoonful is an explosion of flavors. Finally, we turn off the heat and add the chopped greens, such as dill or parsley, which will bring extra freshness and a colorful aspect to the soup.
The vegetable soup is served hot, but it is just as delicious when cooled. It can be accompanied by hot peppers or green onions to add a touch of spiciness, and of course, fresh bread or polenta is a perfect match with the flavors of the soup.
