We start the culinary adventure with a delicious and comforting dish, where the combination of vegetables and meat will delight our senses. The first step involves cleaning and washing the carrots, parsnips, and parsley root, essential ingredients to give a rich flavor to our soup. After cleaning them, we cut them into small cubes so that they cook evenly. These nutrient-rich vegetables will be added to a large pot with about 3-4 liters of water, to which we add a teaspoon of salt to enhance the taste.

Next come the potatoes, which, cut into suitable cubes, will enrich the consistency of the soup. In the meantime, we take care of the turnips that we will fill with a savory meat mixture. These delicately flavored vegetables, which will contribute to the final dish, are carefully peeled and hollowed out, leaving them ready for stuffing.

The meat mixture is prepared by thoroughly mixing ground meat with a pinch of salt, two fresh eggs, two tablespoons of rice, which will absorb the flavors and add texture, and a little finely chopped green parsley for an extra touch of freshness. After obtaining a homogeneous paste, we fill the hollowed turnips with this mixture, being careful not to overfill them to allow for even cooking.

The stuffed turnips are added to the pot with the boiling vegetables, letting them cook for about 20 minutes. During this time, we can prepare the meatballs from the remaining meat, ensuring they are round and uniform in shape. After the 20 minutes have passed, we add the meatballs and the remaining pulp from the hollowed turnips, to maximize the flavor and avoid wasting anything.

Once all the ingredients have boiled well, we turn off the heat and prepare to finish the soup with a mixture of beaten egg and sour cream, which will add creaminess and a refined note. To give it a tangy taste, we add lemon juice, and finally, we sprinkle finely chopped green parsley for a fresh and aromatic touch.

Our soup is now ready to be enjoyed, and its enticing aroma will fill the entire house. Enjoy a dish that combines tradition with authentic flavor!
