To prepare a delicious Rădăuțean soup, we will start by boiling the chicken in water. Ideally, we should use chicken with bones, as this will give a much richer flavor. We add a whole onion, which will contribute aroma, and we make sure to skim off the foam that forms on the surface, to obtain a clear and tasty broth. Meanwhile, we will take care of the vegetables: we wash the carrots, peppers, and celery, then cut them into small cubes. These vegetables will transform the soup into a hearty meal, full of vitamins.

After about 30-40 minutes, when the chicken is boiled and tender, we take the meat out of the pot. We let it cool slightly, and then we remove the meat from the bones, tearing it into thin strips. This step is essential, as the chicken will add a pleasant texture to our soup. In the meantime, we add the chopped vegetables to the chicken broth, letting them boil until they become soft. It is time to season everything with salt, pepper, and if we want, a mix of dried vegetables or a Knorr broth cube, for an extra flavor.

In a separate bowl, we prepare a delicious mixture of sour cream, crushed garlic, and the three egg yolks. We homogenize these ingredients well, making sure to mix them evenly. When the vegetables are cooked, it is time to connect the sour cream with the soup. We take a ladle of hot soup and gradually add it to the bowl with sour cream, stirring continuously to avoid curdling the cream. This is a crucial step, so make sure the sour cream is at room temperature to avoid any unpleasant surprises.

After diluting the sour cream, we pour it back into the pot with the soup. We let the soup boil for a few more minutes, so the flavors can combine harmoniously. Finally, we taste and adjust the seasonings, tailoring them to our preferences. The Rădăuțean soup is now ready, with a rich aroma and perfect consistency. Serve this delicacy hot, perhaps alongside a slice of fresh bread, and enjoy a comforting meal, full of tradition and good taste.
