Vegetable soup is one of the most beloved dishes in Romanian cuisine. It is comforting, full of flavors, and can be adapted according to everyone's preferences. Here’s how to prepare a delicious soup with simple ingredients but with a special taste.

We start by sautéing finely chopped onion in a large pot using a little heated oil. It is important for the oil to be well heated before adding the onion, so it sautés evenly and becomes golden, thus releasing its specific flavors. When the onion turns golden, we add the sliced carrot and diced potatoes. These vegetables are sautéed together for a short while, constantly stirring to avoid sticking.

After a few minutes, we add salt, the preserved vegetables we kept in jars for winter, and diced tomatoes. These fresh ingredients give the soup a vibrant color and a full taste. Then, we cover everything with water and let it boil over medium heat for about 30 minutes, until the vegetables are well cooked.

Once the vegetables are cooked, we add a tablespoon of well-washed rice or, if you prefer, a few strands of noodles. These are added to thicken the soup and give it a pleasant consistency. We let it boil for another 10 minutes. As the soup boils, the flavors mix and become increasingly intense.

When the soup is almost ready, we beat an egg in a small bowl and add lemon salt, borscht, or any other desired ingredient to sour the dish. This is an essential step that will give the soup that distinctive and refreshing taste. We take some of the soup and slowly pour it over the egg, continuously stirring to avoid the egg coagulating. Then, this mixture is returned to the pot, and the heat is turned off.

Finally, we add finely chopped fresh herbs, which will bring an extra freshness and aroma to the soup. The soup is ready in about 40 minutes and is perfect to be served warm, alongside a slice of fresh bread. This simple and tasty recipe will surely bring joy to your table. Enjoy your meal!
