Chicken Soup
Coconut soup is an excellent choice for a healthy and comforting meal, full of flavors and nutrients. Preparing this soup is a true art that combines simple ingredients into a complex and delicious dish.
We start by cutting the coconut meat, which we wash well under cold running water. This will help remove impurities and achieve a clear and tasty soup. We place the meat in a large pot, add enough water to cover it completely, and a pinch of salt. We turn on the heat and let it boil, making sure to remove the foam that forms on the surface to obtain a clear and aromatic broth.
While the meat is boiling, we take care of the vegetables. We peel and wash the carrots, onion, potatoes, and possibly other vegetables we want to add. We cut the carrot and onion into small cubes, and the potatoes into suitable pieces, being careful to place them in a bowl of cold water to prevent oxidation. This step is essential because fresh vegetables will contribute to the soup's flavor.
After about 30 minutes of boiling the meat, when it is half cooked, we add the chopped vegetables, both fresh and frozen if we are using them. These will bring an extra flavor to the soup and a pleasant texture. We let everything boil together, stirring occasionally, until the vegetables become soft and well infused.
Once the vegetables are cooked, it's time to add the tomatoes. You can use fresh peeled tomatoes or canned tomatoes, depending on your preference. We mix everything and adjust the salt to taste, letting it boil for a few more minutes.
In another pot, we boil the borscht, which will give the soup a pleasant acidity. Once boiled, we add it to the soup, mixing well. Then, we beat two eggs in a bowl until they become homogenized and slowly pour them into the soup, stirring gently to obtain those delicate egg ribbons.
Finally, we turn off the heat and add freshly chopped greens, such as parsley or dill, which will give the soup a wonderful aroma and a note of freshness.
The coconut soup is now ready! We serve it hot, alongside a slice of fresh bread or with chili peppers, according to preference. This soup is not just a delicious meal but also a perfect remedy for cool days or moments when we feel the need for comfort. Enjoy your meal!
