Ingredients

1 medium fresh cabbage
2 onions
2 carrots
1 bell pepper

50 ml oil
200 ml tomato juice

Instructions

1. Peel the onion, carrots, bell pepper, and celery. Wash them, then chop them into evenly sized cubes for even cooking.

2. Bring a pot of water (about 3 liters) to a boil. When it starts boiling, add the chopped vegetables and let them cook over medium heat.

3. While the vegetables are cooking, shred the cabbage and wash it well. After 5-10 minutes of cooking the vegetables, add the cabbage to the pot. Stir and let everything simmer together for another 20 minutes. The cabbage should soften but not become mushy.

4. In a pan, heat the oil. Add the flour and stir continuously over low heat until the flour turns light golden. Make sure it doesn't burn. Deglaze the roux with the tomato juice, stirring well to avoid lumps.

5. Pour the roux along with the tomato juice into the soup pot. Stir well. Let it simmer on low heat for another 10 minutes. Check if the cabbage is cooked to your liking.
