Mushrooms are a versatile and delicious ingredient that we can incorporate into various dishes. We start by washing them very well under a stream of cold water, making sure to remove any impurities or sand. After carefully cleaning them, we cut them into smaller pieces to cook them evenly. In a pot, we bring water to a boil and add the mushrooms. We let them boil for 20-25 minutes so that they soften and reveal their flavors. After the time is up, we drain them well, taking care not to keep the excess liquid.

Meanwhile, we take care of the onion. It is finely chopped, and in a preheated pan with oil, we sauté it over medium heat. We want the onion to become translucent and release its sweet aroma, but without burning it, so it doesn't become bitter. Once the onion has taken on a golden hue, we add the boiled mushrooms, stirring constantly to lightly brown them. This step is essential, as browning will give them an intense flavor.

After a few minutes, we remove the mixture from the pan and transfer it to a bowl. We let it cool slightly so we can continue preparing. Using a blender, we puree the mushroom and onion mixture until we obtain a smooth, homogeneous paste. This will become the delicious base of our dish. We then integrate the garlic, which we have pressed, adding it to the paste. Its strong aroma will enrich the dish.

To add extra flavor, we season the paste with nutmeg and cardamom, two spices that complement each other perfectly. We adjust the taste with salt and pepper so that each ingredient harmonizes. The resulting paste can be served alongside fresh tomatoes, which bring a note of freshness and a pleasant contrast. This simple yet refined dish is ideal as an appetizer or side dish.
