To prepare this salad, you will need the following ingredients: 200 g of green or brown lentils, 1 large carrot, 1 red bell pepper, 1 red onion, 2 medium tomatoes, 1 cucumber, a few fresh parsley leaves, 3 tablespoons of olive oil, the juice of one lemon, salt, and pepper to taste.

The first step is to wash the lentils well and put them to boil in a pot with cold water. Add a teaspoon of salt and let them boil for about 20-25 minutes until tender but not too soft. After boiling, drain the lentils and let them cool.

Meanwhile, prepare the vegetables. Peel the carrot and dice it. The red bell pepper and red onion should also be chopped into small pieces. The tomatoes can be diced, and the cucumber peeled and sliced thinly. All these vegetables add a note of freshness and a vibrant taste to the salad.

In a large bowl, combine the cooled lentils with the chopped vegetables. Add the finely chopped parsley, which will bring extra flavor and color to the dish.
