We start by preparing the necessary ingredients to make the most delicious potato and pea patties. First, we need a few medium-sized potatoes, which we will boil in salted water until they are well cooked. This boiling process will take about 20-25 minutes, depending on the size of the potatoes. Make sure to check them occasionally with a fork, so they don't become too soft. After boiling, remove them from the water, let them cool slightly, and then peel them.

Meanwhile, prepare the peas. If using fresh peas, they need to be boiled separately in boiling water for about 5-7 minutes. If you opt for frozen peas, they will be ready much faster, needing only a few minutes to thaw and heat up. Once the peas are boiled, drain them and let them cool.

Once the potatoes have cooled, mash them in a large bowl, mixing them with the boiled peas. This will add a note of freshness and a vibrant color to the mixture. Next, season the mixture with your favorite spices; I recommend a mix of cumin, coriander, and a pinch of black pepper for a more intense flavor. Add salt to taste and breadcrumbs, which will help bind the ingredients and give a pleasant texture to the patties.

After you have obtained a homogeneous mixture, form the patties. Take a portion of the mixture and shape it into balls, which you then flatten slightly with your palms. It is important that they are not too thick, so they cook evenly. Once you have finished shaping the patties, coat them with a little breadcrumbs to achieve a crispy crust when frying.

In a medium-sized skillet, add about 2 tablespoons of oil and let it heat over medium heat. The oil should not be too much, as you want to fry the patties and not drown them. When the oil is hot, place the patties in the skillet, being careful not to overcrowd them. Fry the aloo tikki on each side for 3-4 minutes or until they become golden and crispy. At this stage, the aroma will be irresistible, and the patties will have a perfect crust. Once they are ready, transfer them to a paper towel to absorb the excess oil. These patties can be served with a variety of sauces, such as yogurt sauce or chutney, for a perfect culinary experience. Enjoy your meal!
