When you have a garden like my parents', the joy of cooking with fresh vegetables becomes a true pleasure. On a sunny afternoon, I felt a strong nostalgia for the delicious eggplants prepared by my mother. So, I decided to pay her a visit and pick the most beautiful vegetables from the garden: eggplants, aromatic tomatoes, and fresh garlic. Once home, I immediately entered the kitchen, eager to turn the vegetables into something special.

The first step in this culinary adventure is to wash the eggplants well, using cold water and a gentle brush to remove any impurities. Then, with a sharp knife, I cut them lengthwise, but carefully not to detach the slices, leaving them attached to the stem. This will allow you to fill the eggplants with all the delicious ingredients.

After preparing the eggplants, I generously season them with salt and pepper to add a touch of flavor. Next, between the slices of eggplant, I carefully place thin slices of smoked bacon, which will bring a rich aroma and irresistible taste. I also add some slices of creamy cheese and crushed garlic to intensify the flavor of each bite.

Once I have filled the eggplants, I place them in a heat-resistant dish that I have greased with olive oil to prevent sticking. I cover the dish with parchment paper, which will help retain moisture and allow the eggplants to cook evenly. I put everything in the preheated oven at 180 degrees Celsius and let it bake for 45 minutes. The aroma that spreads in the kitchen is simply delightful!

After 45 minutes, I remove the parchment paper and add the washed and quartered tomatoes on top of the eggplants, which will bring a fresh note to the dish. I also add some sweet corn kernels and a generous layer of grated cheese, which will melt and form a golden and appetizing crust. I leave everything in the oven on low heat for another 15 minutes, so all the flavors blend perfectly.

When the dish is ready, I take the dish out of the oven and proudly admire the result. Serve everything warm, alongside your loved ones, and don’t forget to add a sprinkle of love to each portion. This simple yet flavorful recipe will surely bring smiles to the faces of your loved ones.
