The spices, whose aromas will provide a complex taste, pair perfectly with the base ingredients. The pot is placed on the heat, bringing the mixture to a boil. Once it starts boiling, the heat is reduced and covered with a lid. It is left on low heat for about two hours. The final consistency of the dish should be slightly liquid, considering that as it cools, it will thicken.

After the cooking time has elapsed, the hot mixture is carefully poured into sterilized jars, ensuring that no air bubbles remain. The jars are sealed well, and to ensure better sealing, they are turned upside down for 10 minutes. Then, they can be returned to the normal position and wrapped in towels to cool gradually. This preservation method will help retain the flavors and nutrients for about two months, giving you the chance to enjoy this delicious and healthy dish even out of season.  Ingredients: 1 kg pumpkin, 1/2 kg tomatoes, 2 large onions, 1 clove of garlic, 200 g brown sugar, 200 g white sugar, 1 tablespoon of salt, 1 teaspoon of grated ginger, 1/2 teaspoon of white pepper, 1/2 teaspoon of cinnamon, 500 ml apple cider vinegar, a handful of raisins.
