To prepare a delicious vegetable dish, ideal for a healthy meal, we will use the following ingredients: one medium onion, one carrot, one bell pepper, one sweet pepper, a few green bean pods, one zucchini, two to three cloves of garlic, one cup of tomato juice, olive oil, salt, and fresh parsley. This recipe is perfect for three servings and offers a savory mix of flavors and textures.

We start by peeling the onion, which we will cut into julienne. In a spacious pan, we add the oil and heat it over medium heat. Once the oil is warm, we add the sliced onion and sauté it gently until it becomes translucent and starts to turn golden. This step is essential, as the onion will add a flavorful base to our dish.

After the onion is ready, we add the sliced carrot, which will provide a sweet taste and vibrant color to the dish. We continue with the bell pepper and sweet pepper, sliced thinly, which will bring a crunchy texture. We let the vegetables cook for 2-3 minutes, stirring constantly to ensure they do not burn.

The next step is to add the cleaned green bean pods, cut into 4-5 cm pieces. These will bring a fresh note and a pleasant texture to the dish. We add one cup of water (about 100ml) and salt to taste. We cover the pan and let the vegetables cook over medium heat, stirring occasionally, to cook evenly.

When the pods are almost cooked, we add the diced zucchini. This is the first time I am using zucchini in this recipe, and I am excited about how the flavors blend together. The zucchini will bring a creamy consistency and a delicate flavor.

A few minutes before turning off the heat, we add the tomato juice and minced garlic. These ingredients will add extra flavor and a fresh taste to the dish. After all the ingredients are well combined and cooked, we prepare to serve the food.

To complete this dish, we sprinkle fresh chopped green parsley on top, which will add a note of freshness. Also, for an extra flavor boost, I added a few pieces of salty cheese that melt easily into the dish and give it a special taste. This recipe is not only delicious but also nutritious, perfect for any occasion!
