Spinach with sour cream and cașcaval, with fried eggs

Spinach with sour cream and cașcaval is a simple dish where boiled spinach is bound into a thick sauce of eggs, sour cream and milk. The cașcaval, a semi-hard yellow cheese, goes in at the end and melts into the sauce, and a little more is grated on top, with fried eggs alongside. I keep it as thick as a custard, without thinning it with milk. Preparation: 15 minutes. Cooking: 21 minutes. Resting: 15 minutes. Total time: 51 minutes. Servings: 4. About 620 kcal and 26 g protein per serving.
Ingredients
- 1 kg spinach
- 500 ml water
- 3 tablespoons olive oil
- 1/2 bunch green garlic (30 g)
- 2 eggs
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 400 g full-fat sour cream
- 300 ml milk
- 3 tablespoons flour
- 100 g cașcaval
- 1 tablespoon sunflower oil
- 2 eggs (for frying)
Preparation
1. Take the sour cream out of the fridge 15 minutes before. 2. Wash the spinach well, chop it finely and put it in a pan with 500 ml water and 3 tablespoons olive oil. 3. Boil the spinach, stirring from time to time, until the water reduces, about 10 minutes. 4. Add the finely chopped green garlic, stir and leave on the heat for 1 minute. 5. In a bowl, whisk 2 eggs with 1/2 teaspoon salt and 1/2 teaspoon ground black pepper. Add the sour cream, milk and flour and stir well until smooth. 6. Take 2 tablespoons of the hot spinach and stir them into the bowl, then pour the mixture over the spinach. 7. Stir constantly, on low heat, until it thickens like a custard, about 5 minutes. 8. Add the grated cașcaval and a little salt, if needed. 9. Stir and leave on the heat for 1 more minute. 10. In another pan, heat 1 tablespoon sunflower oil and fry 2 eggs sunny side up, about 4 minutes, until the whites set. 11. Serve the spinach with grated cașcaval on top and the fried eggs alongside.
Notes
The spinach is washed in two changes of water, because sand stays between the leaves. If you double the amounts, use a wider pan, otherwise the spinach does not reduce as fast. For a gluten-free version, replace the flour with 1 and a half tablespoons of starch, dissolved in 2 tablespoons of cold water and added to the sauce as it boils. The starch version contains milk and eggs. Serve with warm bread or mămăligă (Romanian cornmeal polenta). The dish keeps 3 days in the fridge and is reheated on low heat.
Frequently asked questions
What do I do if the sauce curdles and comes out in flakes?
Take the pan off the heat and whisk the sauce for a few seconds. If it still has flakes, put it back on very low heat and stir for 1 minute.
Can frozen spinach be used?
Yes, if it is thawed and squeezed well of water before it goes into the pan. Then follow the same boiling, about 10 minutes, until the water reduces.
What cheese can I use instead of cașcaval?
Telemea, a salty brined cheese, works too, the same 100 g, but it is saltier, so add the salt only at the end, after tasting it.
How much garlic can I use if I like it stronger?
You can use a whole bunch of green garlic instead of half, chopped the same way, and let it cook for 1 minute after it goes into the pan.
