Potato Domino
To prepare a delicious baked potato side dish, we start by peeling the potatoes, making sure to remove any traces of dirt. We focus on the shape we want to achieve: we cut the potatoes into rectangular shapes, creating small bricks that will add a rustic touch to our dish. Then, using a sharp knife, we slice each potato into extremely thin slices, about 2-3 millimeters thick. It is important to maintain the uniformity of the slice thickness so that they cook evenly and we achieve a pleasant texture. The potato scraps, whether they are corners or thicker slices, can be saved for use in other recipes, such as soups or purees.
After cutting all the potatoes, we carefully arrange them in the baking tray. An interesting technique is to place them diagonally so that they overlap slightly, creating an attractive look. This will allow heat to circulate better between the potato slices, ensuring they cook evenly. Once we finish arranging the potatoes, we pour melted butter over them, making sure to cover each slice. The butter will add a rich flavor and contribute to forming that delicious crust we desire.
Now, it's time to season the dish. We sprinkle salt over the potatoes, being careful to distribute it evenly to avoid overly salty or bland areas. After doing this, we place the tray in the already preheated oven at a medium temperature, around 180-200 degrees Celsius. It is important to monitor the cooking time, which varies depending on the thickness of the slices. After about 30-40 minutes, it is good to check the potatoes with a toothpick. It should easily penetrate the potatoes, indicating that they are soft. We also want a slightly golden and crispy crust on top, which will add a pleasant contrast to the soft texture inside. When the potatoes are ready, we take them out of the oven and let them rest for a few minutes before serving, so we can enjoy a savory dish, perfect to accompany any main course.
