Eggless tiramisu

Dessert - Eggless tiramisu by Aurica E. - Recipia

Eggless tiramisu needs the caramel sauce to cool completely before it goes into the mascarpone. The coffee-dipped ladyfingers are arranged in two layers, with mascarpone cream and whipped cream between them, then the dessert is dusted with cocoa. I choose thicker ladyfingers so I can dip them in the coffee without them breaking. Prep: 20 minutes. Cook: 10 minutes. Rest: 1 hour 30 minutes-2 hours 30 minutes. Total time: 2-3 hours. Serves: 10. Approximately 430 kcal and 6 g protein per serving.

Ingredients

  • 100 g sugar
  • 75 ml water
  • 50 ml cream
  • 250 g mascarpone
  • 45 ml cream liqueur
  • 200 ml whipped cream
  • 500 g ladyfingers
  • 300 ml brewed coffee
  • 15 g cocoa

Preparation

1. Make the coffee and leave it to cool. Line a glass baking dish with plastic wrap. 2. Put the water and sugar in a saucepan and boil for 8 minutes, until the syrup turns golden. Take the pan off the heat, pour in the cream and stir vigorously, then put it back on the heat for 2 minutes, until it comes to a boil. 3. Leave the caramel to cool for 30 minutes, until it no longer feels warm to the touch. 4. Beat the mascarpone with the cooled caramel, then fold in the cream liqueur and whipped cream. 5. Quickly dip the ladyfingers in the coffee and arrange a layer in the dish. Spread half the cream over them, add a second layer of ladyfingers and cover with the remaining cream. Dust with cocoa. 6. Refrigerate the dessert for 1-2 hours.

Notes

Keep covered in the fridge for up to 3 days. The mascarpone is easier to mix smoothly if you leave it at room temperature for 15 minutes; if the ladyfingers are very thin, dip them in the coffee on one side only. Add the cream liqueur without boiling; for an alcohol-free version, replace the 3 tablespoons with 3 tablespoons of strong coffee. I start three hours before serving so the caramel has time to cool and the layers have time to set. Serve it with unsweetened coffee; the ladyfingers contain gluten, and the cream contains dairy.

Frequently asked questions

How long should I dip the ladyfingers in the coffee?

Dip them for about one second on each side. If they are very delicate, dip just one side.

What should I do if the cream is too soft?

Put it in the fridge for 20 minutes before spreading it. If the whipped cream wasn't beaten until stiff, chilling alone might not give it enough structure.

What kind of cream holds up well in the filling?

Choose whipping cream with at least 30% fat. Cooking cream won't reach the same consistency when whipped.
