Start by carefully washing the gooseberries, ensuring that they have no impurities or dried leaves. Once cleaned, place them in a large bowl and sprinkle sugar over them. It is important to let the gooseberries sit for a few hours, preferably between 4 and 6 hours, to allow the sugar to absorb the natural juice of the fruit. This process will not only intensify the flavor but will also help in caramelizing them during cooking.

After they have macerated, take a medium-sized pot and transfer the gooseberries along with all the formed sugar. Place the pot over medium heat and bring the mixture to a boil. It is essential to stir occasionally to prevent the gooseberries from sticking to the bottom of the pot. Let the mixture boil for about 30 minutes or until the juice starts to thicken slightly. If you are using a larger quantity of gooseberries, you may need to adjust the boiling time, but always watch the consistency.

Once the mixture has reached the desired consistency, remove the pot from the heat and let it cool slightly. While it is still hot, pour the mixture into sterilized jars, filling them almost to the brim. Make sure the jars are thoroughly cleaned and dried before pouring in the jam to prevent contamination. After filling the jars, place the lid on tightly, but not too tightly, to allow steam to escape.

An ingenious trick is to place the jars upside down on a clean, dry cloth. This will help create a close seal and allow the jam to preserve better. Let the jars cool completely in this position to ensure that air does not enter. Once cooled, you can store the jars in a pantry or any cool, dark place.

I only used 400 g of gooseberries because that was all I had and I added 300 g of sugar. For example, for 1 kg of gooseberries, 800-900 g of sugar is added.
