Preserving Tarragon
Tarragon is an aromatic plant widely used in Romanian cuisine, and preserving it is an essential technique to maintain its distinctive flavor throughout the year. There are several methods by which we can enjoy tarragon even outside of its season. The first method is simple and handy: the tarragon sprigs are washed well, laid on a clean towel to dry completely, after which they can be stored in paper or cloth bags, protected from moisture. This method allows the plants to breathe and retain their flavor for a long time.
Another popular option is freezing tarragon, which is ideal for those who want to have tarragon available all year round. The sprigs are washed, thoroughly dried, then placed in nylon bags, making sure to remove as much air as possible before sealing them. These bags can then be stored in the freezer. This method preserves the tarragon's aroma, and when we want to use it, we can add it directly to dishes without needing to thaw it first.
However, the method I love the most and that offers a unique taste is preserving with vinegar. It is essential to choose young tarragon shoots, which are the most aromatic, preferably in spring, but it is perfectly acceptable to use autumn sprigs as well. The process is simple and does not require much time. After washing the tarragon sprigs, we break the leaves and chop them into larger pieces to retain their aroma. Then, we place the leaves in a clean jar and pour vinegar over them, ensuring that the leaves are completely covered. It is important to seal the jar well and keep it in cool places, away from direct sunlight. The vinegar not only preserves the tarragon but also adds a note of acidity that complements and enriches the flavor of dishes.
An important detail is that we should not add salt, as it will absorb the vibrant color of the tarragon leaves, and upon opening the jar, we will face a less appealing appearance. Thus, through this preservation method, we can enjoy the delights of tarragon for years to come, bringing a touch of aroma and flavor to every cooked dish, whether it is soups, salads, or sauces. Preserving tarragon with vinegar is not only a way to extend the life of this aromatic plant but also an opportunity to experiment with diverse tastes and flavors in the kitchen.
