To prepare a delicious vegetable salad, it is essential to follow the correct steps to achieve a savory and crunchy mix that will add freshness to our meals. We start by preparing the basic ingredients: a medium-sized cabbage, a few fresh cucumbers, and colorful bell peppers, which will not only bring a special taste but also a vibrant palette of colors. It is recommended to choose firm vegetables, without spots or signs of damage, to ensure that the salad will be of the highest quality.

After cleaning the cabbage, cucumbers, and peppers, we slice them thinly, taking care to maintain their uniformity. These slices are essential to allow for even marination and for each bite to be full of flavor. Once we finish cutting the vegetables, we add them to a large bowl, where we will make the final mix.

In this bowl, we add a quantity of vinegar, preferably white wine vinegar or apple cider vinegar, depending on personal preferences. Then, we add sugar, adjusting the amount according to how sweet or sour we want the final product to be. We do not forget about salt, which will enhance the flavors, and white pepper, which will give a slight spicy taste. To preserve the vegetables, we add a large tablespoon of salicylic acid, a natural preservative, and mix everything carefully.

It is important to let the vegetables marinate from one day to the next, stirring occasionally to ensure that all the ingredients blend harmoniously. The next day, we focus on the onion, whose flavor will perfectly complement the salad. We slice ½ kg of onion into thin slices, add a pinch of salt, and gently squeeze it to remove excess water. This technique will help the onion release its natural juice, making it less pungent.

Once the onion is prepared, we add it to the bowl with the vegetables and let the mixture sit for about two hours. This time will allow the flavors to develop and integrate perfectly. Once the waiting time is over, it is time to transfer the salad into jars. Each jar will contain a small bay leaf, which will provide a subtle and pleasant aroma. After sealing the jars, we place them in a cool place, such as a pantry, where they can ferment slightly.

It is important to mention that throughout the day, the vegetables will release a delicious juice that will enrich the salad, giving it a special texture and taste. This simple yet flavorful recipe will surely be a hit at any meal, bringing a touch of freshness and health to our diet.

For one serving: 1.5 kg of autumn cabbage, 1.5 cucumbers, 1.5 bell peppers, 1 kg of onion, 200 ml of vinegar, coarse salt, sugar to taste, ground white pepper to taste (those who wish can add whole peppercorns), 1 tablespoon of salicylic acid, bay leaves.
