To prepare a delicious elderflower jam, we start by picking the elderflowers, ensuring they are fully ripe and healthy, with no signs of pests. Once we have gathered the flowers, we select only the most beautiful berries, carefully separating them from the stems. It is essential to ensure the berries are clean, so we wash them thoroughly. An effective method is to place them in a colander and submerge them in a pot of cold water. This way, we avoid crushing the delicate fruits. We change the water several times to ensure all impurities have been removed.

After the berries are well washed, we sprinkle them with 800 g of sugar, gently mixing to coat them evenly. We let the mixture sit for 24 hours, so the sugar dissolves and extracts the rich flavors from the elderflowers. This maceration process is essential for obtaining a flavorful and tasty jam.

The next day, we prepare a large pot on the stove, where we will place the elderflower and sugar mixture. We turn the heat to high and wait for it to boil. When we notice a thick syrup forming and it begins to bubble, we carefully remove the elderberries from the pot using a slotted spoon, leaving only the syrup. We add a few slices of lemon, which will provide a tangy flavor and a fresh aroma to our jam.

We continue to boil the syrup until we observe that it thickens, making sure to stir constantly to prevent sticking to the bottom of the pot. When the syrup reaches the desired consistency, we add the elderberries back in and let it boil together for about 15 minutes on high heat.
