Delikat is a special seasoning that combines the flavors of fresh autumn vegetables with the tradition of preparing dried vegetable mixes. Unlike Vegeta, which focuses on the root vegetables specific to soups, Delikat adds a wider palette of flavors, including bell peppers, sweet peppers, and leeks, which not only enrich the taste but also provide an explosion of color to our dishes. This combination makes Delikat ideal for use in soups, broths, stews, sauces, and even roasts, adding a touch of flavor without being recommended for soups.

To prepare this seasoning, it is essential to choose the vegetables carefully, considering their freshness and quality. For example, the carrots should be crunchy and juicy, while the white vegetables – namely celery, parsley, and parsnip – should be full of flavor. The proportion of ingredients should be similar to that used in Vegeta: one measure of carrots for one measure of white vegetables. Additionally, we add peppers, leeks, and fresh tomatoes, all aimed at creating a balanced and flavorful mix. This addition is crucial because tomatoes bring a sweet and acidic taste that perfectly contrasts with the other ingredients.

An interesting aspect is that, in the preparation of Delikat, fresh herbs can also be used, which, after the drying process, retain their vibrant color and do not become a mix of khaki shades. This adds a touch of freshness and an unmistakable aroma that will transform any dish into a true delicacy.

Another important detail is that no salt is added to the final product. This is a deliberate choice, as salt is used only between the jar lid and its protection, serving to protect the dried vegetables from moisture and prevent mold. Instead, to add an exotic note, I prefer to include a teaspoon of curry in one of the jars. This choice is inspired by the desire to replace the addictive taste of monosodium glutamate, an ingredient that can often distort our perception of the natural taste of food. Thus, Delikat becomes not just a simple seasoning but a true culinary experience that invites us to rediscover the authentic flavors of seasonal vegetables.
