Ham and mushroom pizza

Ham and mushroom pizza is usually served hot, cut into slices, with browned edges. The yeast dough bakes with sauce, ham, mushrooms, vegetables and melted mozzarella. I grate the mozzarella using the large holes of the grater so it spreads evenly. Preparation: 25 minutes. Cooking: 30-40 minutes. Resting: 40 minutes. Total time: 95-105 minutes. Serves: 4. Ingredients
For the dough
- 500 g white flour
- 1 teaspoon salt
- 250 ml water
- 2 g fresh yeast
- 1 teaspoon sugar
- 20 ml oil
For the topping
- 200 g homemade pizza sauce
- 5-6 slices ham
- 5-6 button mushrooms
- 50 g black olives
- 1 medium red onion (150 g)
- 1 medium red bell pepper (150 g)
- 1 small hot pepper (optional)
- 300 g mozzarella
To serve
- 150 g homemade ketchup
Preparation
1. Warm 100 ml of water. Add the sugar, 2 tablespoons of flour and the crumbled yeast. Stir until dissolved, then leave for 10 minutes, until foamy. 2. Sift the remaining flour and sprinkle in the salt. Pour in the yeast mixture and the remaining 150 ml of water, a little at a time. Add the oil and knead for 8 minutes, until you have an elastic dough that doesn’t stick to your hands. 3. Cover the dough and leave it to rise for at least 30 minutes. Divide it in two and roll each half into a 30 cm circle. 4. Cut the ham into small pieces, slice the mushrooms and cut the onion into thin strips. Dice the bell pepper; slice the hot pepper if using. Grate the mozzarella using the large holes of the grater. 5. Place the pizza bases on round 30 cm trays. Divide the sauce, ham, mushrooms, olives, onion and bell pepper between them. Sprinkle the mozzarella on top and add the hot pepper, if using. 6. Bake each pizza in a preheated oven at 200°C for 15-20 minutes, until browned on top. Serve with homemade ketchup.
Notes
Choose firm button mushrooms with closed caps; slice the large ones thinner than the small ones. If you rinse them, dry them well before cutting so no water gets onto the dough. I don’t rush the rising, even if the dough already feels soft and elastic; I leave it for at least 30 minutes. The middle can stay wet if the sauce is too runny, so spread on a thin layer and don’t pile it up in the center. Homemade ketchup goes well with the slices, and a simple green salad is another way to serve them. Leftover pizza keeps covered in the fridge for up to 3 days.

Can I use dry yeast?
Yes. Replace the 2 g of fresh yeast with 0.7 g of dry yeast and mix it into the yeast mixture.
Why does the dough shrink when I roll it out?
Cover it and leave it to rest for another 10 minutes, then roll it out again.
What kind of ham works well?
Choose thinly sliced cooked ham; the pieces are easier to spread over the dough than thick slices.
Can I use canned mushrooms?
