Pasta with Sea Urchin
To prepare a delicious and nutritious soup, we start by preparing the basic ingredients. We take a fresh carrot, which we finely grate using a small grater. This will add sweetness and a pleasant texture to our dish. Then, we chop a colorful bell pepper into small cubes, which brings an extra freshness and a vibrant taste. Onion and garlic are essential for flavor, so we peel and finely chop them. To retrieve them more easily from the soup, we can stick them onto a toothpick, an ingenious method that will help us find them without problems.
In a pot, we add all these grated and chopped vegetables, along with the beet leaves, which we chop finely. We sprinkle a pinch of salt to help the vegetables release their juices and steam evenly. Next, we pour in a tablespoon or two of tomato paste, which will provide a rich flavor and an attractive color to the soup. We add the drained and rinsed canned chickpeas, ensuring that the protein intake is generous.
After adding enough water, we let the mixture simmer on low heat, stirring occasionally to prevent sticking. We let the soup come to a boil again, then turn off the heat, covering the pot to allow the flavors to blend perfectly. In the meantime, we cook the pasta in another pot of salted water, according to the package instructions. When al dente, we drain it and add it to the soup, mixing well to combine all the ingredients.
