Bass Rolls with Assorted Fruits (Guobinfen Luyujuan)
The perch is a delicious and versatile fish, and preparing it can bring a touch of creativity to your kitchen. We start by cleaning the perch of scales, making sure to remove the entrails as well. After this essential step, we wash the fish well to ensure no impurities remain. We continue by cutting the meat along the spine, removing the head and bones, thus obtaining two large fillets of fish, ready to be transformed into delicious rolls.
Next comes an important step in the preparation process: scoring the fish fillets. We make diamond-shaped cuts on each fillet at a 45-degree angle, keeping about a centimeter distance between each cut. Then, we rotate the piece of meat 90 degrees and repeat the process, being careful not to tear the meat during cutting. These cuts will help with even marination and the penetration of spices.
After we finish with the cuts, we evenly sprinkle salt and white pepper on the fish fillets, making sure to rub them well with our hands to ensure the flavors integrate perfectly. Then, we pass each fillet through starch, making sure it is completely coated, which will help achieve a crispy texture when frying.
Next, we pour a generous amount of oil into a pan. When the oil is well heated, we carefully place the fish fillets to fry. It is important to hold both ends of each fillet to ensure even frying, allowing the middle part to cook first, then letting them roll completely in the hot oil. When the rolls take on a golden hue, we carefully remove them onto a plate.
Meanwhile, we take care of the sauce that will accompany this savory dish. We cut our favorite fruits into small pieces and add them to another pan, along with sugar and orange juice, to create a sweet and sour sauce. We mix the ingredients carefully, then dissolve the starch in water and add it to the pan, stirring constantly. When the sauce becomes thick and glossy, we turn off the heat.
