Preparation Method
1. Peel the potatoes, wash them, and slice them into medium-thick rounds. Set aside.
2. Heat a pan with a little oil. When the oil is hot, add the finely chopped celery and the crushed or finely chopped garlic cloves. Sauté on low heat for 2-3 minutes.
3. Sprinkle in the cumin, turmeric, allspice, and a little chili powder. Stir and let the spices release their aroma for about 1 minute.
4. Add the kaiser cut into small cubes. Let it brown slightly, still on medium heat, for another 2-3 minutes.
5. Add the ground meat to the pan. Mix and break it up with a spatula, making sure there are no large lumps. Pour in a splash of soy sauce and salt to taste. Continue cooking until the meat changes color completely and starts to brown slightly. It doesn’t need to be fully cooked, just no longer pink and fragrant. Remove the pan from heat.
6. Grease the bottom of a deeper pot (a baking dish works too if you prefer). Lay down a first layer of potato rounds. Don’t overlap them too much, just enough to cover the bottom of the dish.
7. Pour some of the meat mixture over the potatoes. Level it out. Add a second layer of potatoes, then another layer of meat, and continue this until all ingredients are used up. The final layer should be potatoes.
8. In a bowl, beat the two eggs with 200 ml of sour cream until well combined. To this mixture, add 1-2 tablespoons of barbecue sauce, a splash of soy sauce, and a little water (about 2-3 tablespoons), just enough to thin the sauce. Mix well.
9. Pour this sauce over the assembled moussaka, allowing it to seep between the layers. Don’t worry if it doesn’t cover everything perfectly; it will distribute while baking.
10. Sprinkle the grated cheese on top.
11. Bake the moussaka in the oven at 180°C for about an hour or until the top potatoes are nicely browned and a fork easily pierces them. If it browns too quickly, cover it with aluminum foil for the last 20 minutes.
