Chicken-stuffed capia peppers

Meat - Chicken-stuffed capia peppers by Eftimia P. - Recipia

Chicken-stuffed capia peppers simmer in borș, a tangy fermented bran liquid, with rice in the filling and a slice of tomato on top. They turn out tender, with a tangy broth and a filling that holds together well. I choose peppers with thick walls, which keep their shape while simmering. Prep: 25 minutes. Cook: 101 minutes. Total time: 126 minutes. Serves: 4. Approximately 700 kcal and 50 g protein per serving.

Ingredients

  • 4 large capia peppers
  • 2 medium onions (300 g)
  • 1 small carrot (70 g)
  • 2 green onions
  • 30 ml oil
  • 100 g tomato juice
  • 100 g rice
  • 1 kg ground chicken
  • 15 g parsley
  • 15 g dill
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1 medium tomato (120 g)
  • 400 ml borș
  • 500 ml water
  • 200 g sour cream
  • 4 hot peppers

Preparation

1. Cut off the tops of the capia peppers and remove the seeds. Rinse them inside with cold water, taking care not to tear them. 2. Chop the onion, carrot and green onions. Heat the oil in a saucepan and sauté the vegetables for 8 minutes, until translucent. 3. Add the tomato juice and cook for another 3 minutes, stirring, until the sauce starts to bubble gently. 4. Stir in the rice, then the ground chicken, chopped parsley and dill. Add the salt and pepper and mix everything together. 5. Cut the tomato into slices for the lids. Fill the peppers without packing the mixture tightly and cover each with a slice of tomato. 6. Put the parsley and dill stems in the bottom of the pot, then arrange the peppers inside. Pour in the borș and 500 ml water, so the liquid covers them. 7. Simmer over medium heat for about 90 minutes, until the peppers are tender and the rice in the filling is cooked. Serve with sour cream and hot peppers.

Notes

Choose large peppers with firm flesh and no cracks. Small, thin ones soften faster, so check them before the 90 minutes are up. It is easier to season the filling after mixing it well, before stuffing the peppers. Don’t rush the stuffing: leave a little room at the top, since the rice swells as it cooks. As with cabbage rolls, the mixture should hold together, not be packed right up to the top. If the broth is too sour for your taste, add sour cream to your bowl, not directly to the pot. Keep the cooked peppers covered in the fridge for up to 3 days. Serve with sour cream and hot peppers, plus bread for the tangy broth. For a different filling, you can use the same amount of ground turkey; sour cream contains dairy.

Frequently asked questions

Why do the peppers crack while simmering?

They are usually packed too tightly. Leave about 1 cm of space at the top of each one.

What should I do if the liquid reduces before they are done?

Add 150 ml hot water and keep simmering over medium heat.

Can I use bell peppers instead of capia peppers?

Yes, choose red bell peppers with thick walls, about 180-200 g each.

How can I fix the filling if the rice is still firm?

Simmer the peppers for another 10 minutes over low heat and check the rice in one of them again.
