Chicken liver pâté – A delicacy that's easy to prepare

Chicken liver pâté is a traditional recipe often associated with holidays and family meals, but also an excellent option for those looking for a lighter alternative to the classic lamb pâté. This version is not only delicious but also healthier, considering its lower fat content. I invite you to discover the necessary steps to prepare this savory appetizer that is sure to impress everyone!

Preparation time: 30 minutes
Baking time: 45 minutes
Total time: 1 hour and 15 minutes
Number of servings: 8 servings

Ingredients:

- 1 kg chicken liver (you can also add chicken breast, hearts, or gizzards for a varied texture)
- 2 bunches of green onions
- 3 cloves of garlic (or green garlic for a fresher taste)
- 1 slice of bread (ideal for binding the mixture)
- 7 eggs (4 for the mixture, 3 for decoration)
- A handful of fresh parsley (or other preferred herbs)
- Salt and pepper to taste
- Butter for greasing the pan

Preparing the chicken liver pâté:

1. Preparing the liver: Start by thoroughly washing the chicken liver. Make sure to remove any traces of fat. After cleaning, boil it in a pot of water with a pinch of salt. Cook the liver for about 15-20 minutes until tender. After boiling, drain it and let it cool slightly.

2. Boiling the eggs: In another pot, boil the remaining 3 eggs for decoration. They should boil for 10 minutes to achieve a firm yolk. Once boiled, let them cool, then carefully peel them.

3. Preparing the ingredients: Meanwhile, clean the onion, garlic, and parsley. Chop them finely for easy incorporation into the mixture. The bread will be soaked in water, then squeezed well and crumbled.

4. Combining the ingredients: In a blender, place the boiled liver and blend until you achieve a smooth paste. Transfer it to a large bowl. Add the onion, garlic, crumbled bread, 4 beaten eggs, salt, pepper, and chopped parsley. Mix all the ingredients well until homogeneous.

5. Assembling the pâté: Preheat the oven to 180°C (moderate heat). Generously grease a baking dish with butter. Pour half of the liver mixture into the dish, leveling it evenly. Place the boiled and peeled eggs on top, then complete with the remaining liver mixture. Add a few pieces of butter on top for a golden crust.

6. Baking: Place the dish in the oven and bake the pâté for 40-45 minutes, or until it is nicely browned on top. To check if it’s done, you can use a toothpick – if it comes out clean, the pâté is perfect.

7. Cooling and serving: After baking, let the pâté cool in the dish for 10-15 minutes. Then, carefully remove it and slice it. You can serve it warm or cold as an appetizer, alongside a fresh salad or toasted bread.

Notes and useful tips:

- Variations: You can experiment with different herbs, such as dill or thyme, to give your pâté a personal touch. Additionally, adding grated carrot or chopped bell pepper can bring extra color and texture.
- Storage: The pâté keeps well in the refrigerator for 3-4 days, and its taste gets even better the next day when the flavors have had time to meld.
- Calories and nutritional benefits: A serving of chicken liver pâté contains approximately 200-250 calories. Chicken liver is an excellent source of protein, B vitamins (especially B12), and minerals like iron, making it a nutritious food.
