To achieve a perfect dough, we start by adding flour to a large bowl, along with a pinch of salt, which will enhance the flavor of the preparation. We use a whisk to mix the ingredients, but an excellent alternative is to sift the flour, which will help aerate it and make the dough fluffier. In another bowl, we take the yeast and combine it with two tablespoons of sugar, gently mixing until the sugar dissolves completely. This step will help the yeast activate faster. Once we have a homogeneous mixture, we pour the yeast mixture over the flour in the bowl.

Next, we prepare warm milk, to which we add sugar and vanilla essence for a special taste. Once the sugar has melted, we add the milk to the bowl with the flour, along with a fresh egg. We start kneading the dough, being careful to achieve a slightly sticky but well-bound texture. During the kneading process, we begin to add the oil gradually, continuing to knead until it is completely incorporated into the dough. After reaching the desired consistency, we cover the bowl with a clean towel and let the dough rise until it doubles in volume, a process that should take about an hour.

While the dough rises, we can prepare the filling. The cheese, preferably cottage or ricotta, is mixed with salt, eggs, sugar, and vanilla. We also add raisins, which will provide a pleasant contrast of textures and flavors. We mix all the ingredients well to obtain a homogeneous composition. Once the dough has risen, we divide it into two equal parts. Each part is rolled out on a surface dusted with a little flour, making sheets about 2 mm thick. With the help of a knife, we cut the dough into squares of suitable size.

On each square, we add a tablespoon of the cheese filling, then gather the corners to form a bun. We place the buns in a baking tray lined with parchment paper, leaving a small space between them, and let them rise again for 20 minutes. To achieve a golden and appetizing crust, we brush them with a beaten egg and sprinkle with a little sesame. The tray is placed in the preheated oven, where the buns will bake until they become brown and fragrant.
