Turkey stew

Meat - Turkey stew by Irina G. - Recipia

Turkey stew brings together round red peppers and long pointed red peppers after the thighs simmer for 20 minutes. This turkey and vegetable stew gets a tomato sauce with dill, and the tomato paste goes in near the end. I cut the turkey into cubes about 2 cm across, without measuring every single one. Prep: 20 minutes. Cook: 53 minutes. Total: 73 minutes. Serves: 4. Approximately 330 kcal and 26 g protein per serving.

Ingredients

  • 500 g boneless turkey thighs
  • 1500 ml water
  • 2 large onions (300 g)
  • 2 tablespoons oil (30 ml)
  • 2 carrots (160 g)
  • 3 garlic cloves
  • 1 round red pepper (150 g)
  • 1 long pointed red pepper (150 g)
  • 2 tomatoes (300 g)
  • 250 ml hot water
  • 15 g fresh dill
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1 teaspoon sweet paprika
  • 100 g tomato paste

Preparation

1. Pat the thighs dry with paper towels and put them in a pot with 1500 ml water. Simmer over low heat for 20 minutes, until fully cooked, then take them out and drain them. 2. Slice the onions into thin strips and sauté them in 2 tablespoons of oil. Cut the carrots into rounds, chop the garlic, dice the round red pepper and the long pointed red pepper, and add them to the pan. Sauté everything for 5 minutes, until the onion softens. 3. Chop the tomatoes and add them to the pan. Sauté for another 5 minutes, then pour in 250 ml hot water. Simmer over low heat for 15 minutes, until the carrots soften. 4. Cut the thighs into cubes about 2 cm across and add them to the vegetables. Add 1 teaspoon salt, 1/2 teaspoon ground pepper, 1 teaspoon sweet paprika, and half the chopped dill. Simmer for 5 minutes, until the sauce is gently bubbling. 5. Stir in the tomato paste and the remaining dill. Simmer for 3 more minutes, until the sauce thickens a little.

Notes

Boneless thighs with a little visible fat stay juicier than very lean ones, and small thighs may cook faster; check them after 15 minutes. If the carrot rounds are thick, slice them thinner so they soften along with the peppers. Very juicy tomatoes can thin the sauce; leave the pan uncovered for another 5 minutes, until it reduces a little. Smoked paprika can overpower the dill; if you prefer it, use 1/2 teaspoon instead of the sweet paprika. Dill with thick stems can be trimmed before chopping, and the leaves chopped separately. The stew can be cooked a few hours ahead and kept covered in the fridge for up to 3 days. When reheating, if the sauce has thickened, stir 2 tablespoons of water into the pan. I serve it with polenta.

Frequently asked questions

Can I use turkey breast instead of thighs?

Yes. Cut it into pieces about 3 cm across and simmer for 12-15 minutes, then continue with the vegetables.

Can I use bell pepper instead of the round red pepper?

Yes, use one red bell pepper weighing about 150 g, diced.

Can I add the raw meat straight to the vegetables?

Yes, cut the thighs into 2 cm cubes and simmer them in the sauce for 25-30 minutes, until cooked through; add 100 ml hot water if the sauce reduces too much.
