Tico fish ceviche

Fish - Tico fish ceviche by Emanuela A. - Recipia

The tilapia fillet is cut into bite-size cubes, and Tico fish ceviche marinates in plenty of lemon juice. The red onion and cilantro sit in all that juice, while the jalapeño brings adjustable heat; after its rest in the fridge, the cubes stay juicy, with plenty of marinade around them. I eat it with a spoon, scooping up a little of the juice too. Prep: 15 minutes. Cook: 0 minutes. Rest: 120 minutes. Total time: 135 minutes. Servings: 1. About 300 kcal and 42 g protein per serving.

Ingredients

  • 1 tilapia fillet (200 g)
  • 1 large red onion (200 g)
  • 120 ml juice from 4 lemons
  • 1 jalapeño pepper (15 g)
  • 1 teaspoon salt
  • 5 drops Tabasco sauce
  • 1/2 teaspoon ground pepper
  • 15 g fresh cilantro

Preparation

1. Cut the tilapia fillet into cubes about 2 cm across. 2. Dice the red onion. Squeeze 4 lemons and measure out 120 ml of juice, then pour it over the fish. 3. Finely chop the jalapeño and add it gradually, tasting as you go. Add 1 teaspoon of salt and 5 drops of Tabasco sauce; add 1/2 teaspoon of ground pepper only if you want more heat. 4. Chop the cilantro and stir it into the bowl. Cover and refrigerate for at least 2 hours; there should still be plenty of juice around the fish.

Notes

There are plenty of versions in Costa Rica; at Transilvania Hostel and Catering Events in San José, tourists often ask for the Tico version. Keep it covered in the fridge and serve it on the day you make it; if you want a different level of heat, replace the jalapeño with the same amount of green chili pepper. Serve it in small bowls with salted crackers on the side. Large pieces need more time in the juice, while small ones soften faster; I make it two hours before the meal. Choose fish intended to be eaten raw, since lemon juice does not replace safe preparation of the fish.

Frequently asked questions

Can I use another fish instead of tilapia?

Yes. Use 200 g of skinless sea bass and cut the fillet into evenly sized cubes.

How can I mellow the red onion?

Leave it in cold water for 10 minutes after cutting it, then drain and dry it before mixing it with the fish.

Can I use lime juice?

Yes, the juice of 4 limes can replace the juice of the 4 lemons. Squeeze them just before adding the juice to the bowl.
