Baked zucchini stuffed with chicken

Baked zucchini stuffed with chicken holds the chicken and vegetable filling in place, then softens in the oven without losing its shape. The chicken and tomato filling is tender, with melted cheese on top. I choose medium zucchini with firm skin so I can scoop them out without breaking them. Prep: 20 minutes. Cook: 67 minutes. Total: 87 minutes. Serves: 2. About 600 kcal and 52 g of protein per serving.
Ingredients
- 30 ml oil
- 1 medium onion (150 g)
- 3 green onion stalks (30 g)
- 1 medium carrot (80 g)
- 1 medium zucchini (350 g)
- 1 tablespoon kapia pepper paste
- 1 medium bell pepper (150 g) optional
- 300 g chicken breast
- 3 medium tomatoes (450 g)
- 1 teaspoon salt
- 1/4 teaspoon ground pepper
- 100 g Delaco sandwich cheese
Preparation
1. Pat the chicken breast dry with paper towels and cut it into small cubes. Cut the zucchini lengthwise, scoop it out and set aside some of the flesh, without seeds, diced; grate the carrot, and chop the onion and green onion stalks. 2. Heat 30 ml of oil in a large skillet. Add the onion and green onion stalks and cook for 5 minutes, until softened. 3. Add the grated carrot and zucchini flesh to the skillet and cook for 2 minutes. Add the kapia pepper paste and, if using, the diced bell pepper; cook for 5 minutes more, until the vegetables soften. 4. Add the chicken breast and cook for 7 minutes, stirring, until opaque. Blend the tomatoes, pour them into the skillet and add 1 teaspoon of salt and 1/4 teaspoon of pepper; let the filling simmer for 8 minutes, until the liquid reduces. 5. Heat the oven to 180°C. Arrange the zucchini halves on a parchment-lined baking tray, fill them and press the filling down gently. Bake for 35 minutes, until the zucchini softens. 6. Finely grate the cheese, sprinkle it over the zucchini and bake for 5 minutes more, until melted. Serve warm.
Notes
I serve them with fresh bread and a simple green salad. For another vegetable, add a diced bell pepper along with the carrot; you can replace the zucchini with a medium eggplant. The cheese contains dairy. Keep the zucchini covered in the refrigerator for up to 3 days and reheat them in the oven, in a covered dish, at 160°C. Choose small or medium zucchini that are firm and have smooth skin, so they are easy to scoop out. For larger ones, remove the developed seeds and leave the walls thick enough to hold the filling. The onion can cook quickly, so let it soften before adding the carrot. If the tomatoes are very juicy, leave the filling on the heat until the liquid is no longer pooling in the skillet.
Frequently asked questions
Can I use chicken thighs instead of breast?
Yes, use 300 g of boneless, skinless thighs, cut into small cubes. Cook them in the skillet for 9 minutes, until no longer pink inside.
Can I replace medium tomatoes with cherry tomatoes?
Yes, use 400 g of cherry tomatoes cut in half. Blend them before pouring them into the skillet.
Do I need to peel the zucchini?
No, you can leave the skin on. If the zucchini is very large, cut each half into two shorter pieces before filling.
Can I bake the zucchini in a ceramic dish?
Yes, use a suitably sized ceramic dish, with the halves fitting in a single layer. Bake them at 180°C, as you would in a baking tray.
