We choose white or yellow potatoes, which have a creamy texture. We peel the potatoes and cut them into cubes similar in size to the meat, so they cook evenly. Once the meat is almost ready, we add the potatoes to the pot so they can absorb the delicious flavors of the meat. Now, let's focus on the horseradish sauce, which will add an intense and refreshing flavor to our dish. In a pan, we heat a tablespoon of olive oil over medium heat. We add a tablespoon of flour and quickly stir to form a roux, being careful not to burn it. After the flour slightly changes color, we gradually pour in water, continuously stirring to avoid lumps. We let the sauce simmer for a few minutes until it thickens slightly. Towards the end, we add grated horseradish, which can be fresh or from a jar, depending on personal preference.
