The recipe for sautéed cabbage is a traditional Romanian dish that brings an unmistakable flavor to our cuisine. To prepare delicious sautéed cabbage, we start by choosing a larger cabbage with meaty and compact leaves. This will ensure a pleasant texture and intense flavor. We clean the cabbage of the outer leaves, which may be wilted or damaged, then wash it well under cold running water. The next important step is to remove the core by cutting the cabbage into quarters. After performing this operation, we wash it again to ensure that we remove any impurities.

Once the cabbage is prepared, we slice it finely, and meanwhile, we put lard in a pot over medium heat. The lard will provide a rich flavor and a special aroma to the dish. As we slice the cabbage, we gradually add it to the pot, making sure to stir constantly to prevent sticking. It is important to keep the heat at a low level so that the cabbage sautés evenly without frying.

Once all the cabbage slices are added, we notice how it begins to reduce and release water. However, to ensure that the cabbage becomes soft and tasty, we add 7-8 tablespoons of water from time to time so that it does not dry out. We season the dish with salt and pepper to taste, and if we want to give it an extra flavor, we can also add a few peppercorns. It is essential to stir again to evenly distribute the spices.

Throughout the cooking process, the cabbage changes color, becoming glossier and acquiring a reddish hue. This is a sign that the cabbage is almost ready. When it becomes soft and fragrant, our dish is ready to be served. Sautéed cabbage can be enjoyed as a side dish alongside grilled meat or fried sausages, but it is just as delicious served simply on a slice of toasted bread. This recipe is not only a tasty choice but also a way to bring a touch of tradition to every meal.
