To prepare a delicious recipe for pumpkin stuffed with meat and rice, we start by choosing a beautiful, pear-shaped pumpkin with orange skin, which will provide a sweet aroma and a pleasant texture. After cutting it in half, we will focus on thoroughly cleaning the inside of the seeds using a spoon. It is important to ensure that the pumpkin is clean so that it can be filled with a tasty mixture. In the remaining cavity, we pour about 100 ml of water, which will help maintain moisture during baking. We place the half pumpkin, cut side up, in a baking dish and put it in the preheated oven, allowing it to bake for about 15 minutes.

Meanwhile, we turn our attention to the delicious filling we will prepare. We start by finely chopping the onion and sautéing it in a pan with 2 tablespoons of oil until it becomes golden and translucent. This will add a special flavor to our mixture. Then, we add the other half of the pumpkin, which we previously diced into small cubes. This step will enrich the filling with a fine texture and a pleasant roasted pumpkin aroma. After the pumpkin has begun to soften, we add the minced meat, mix well, and let everything simmer on low heat for 5 minutes for the flavors to combine.

We season the mixture with salt, pepper, paprika, and a little ginger to give it a spicy and interesting taste. In another pot, we boil the rice for about 10 minutes, then add it to the meat mixture. It’s time to carefully mix everything so that the ingredients combine perfectly. After the mixture has cooled slightly, we add the whipped cream with the two eggs and a handful of chopped parsley, which will add freshness and color. We also add chopped walnut meat, which will provide a crunchy and delicious contrast.

We fill the pumpkin halves with this rich and aromatic mixture, ensuring that each serving is full of flavor. After we finish filling, we put the dish back in the oven, allowing the pumpkins to bake for about 30 minutes. When they are ready, we take them out of the oven and serve them hot, sprinkled with fresh chopped parsley and, optionally, with a spoonful of sour cream on top. This recipe is not only delicious but also brings a touch of beauty to the table, being perfect for a dinner with family or friends. Enjoy every bite!
