To prepare a delicious stuffed chicken recipe with a savory mix of ingredients, we start by ensuring that all the ingredients are at hand. First, we will prepare the filling, which is essential for giving the chicken a special flavor. We mix sausage meat with peeled and diced carrots, peeled and cored apples, also diced, beaten egg, finely chopped bacon, and grated parmesan. This mixture will add a sweet and savory note, creating a pleasant contrast between the meat and the filling.

Once the filling is ready, we take care of the chicken. We start by deboning the chicken, carefully removing the wings, then cutting through the entire backbone along with the neck and ribs. This step is crucial for obtaining a uniform chicken that is easy to stuff. We remove the bones from the thighs, cutting the meat like an open book, and the breastbone will also be removed. Once the chicken is completely deboned, we gently pound the meat with a hammer to make it softer and easier to stuff.

Then, we add the previously prepared filling. Unfortunately, the chicken skin is very thin and torn, making it impossible to tie or sew. Thus, we will wrap the chicken in aluminum foil, tightening it well to avoid leaks or openings. We place the wrapped chicken in a Jena or Pyrex dish, preparing it for baking.

In the oven, we will bake the chicken at medium heat for about an hour. This time will allow the heat to penetrate well into the meat and cook it evenly. After the baking time has expired, we carefully remove the foil, being careful not to burn ourselves, and add the peeled and diced potatoes around the chicken. They will absorb the delicious flavors and become a perfect accompaniment.

We let everything bake together until the potatoes are ready and the chicken becomes golden and appetizing. It is important to let the dish cool slightly before slicing it, so the juices redistribute and we get tender and tasty meat.
