Spinach is an extremely versatile vegetable, rich in nutrients and perfect for being integrated into numerous dishes. In this simple recipe, we will transform boiled spinach into a delicious side dish, ideal for complementing any meal. We start by preparing the necessary ingredients: a generous handful of fresh spinach, a few cloves of garlic, olive oil, cheese (preferably feta or goat cheese for a more intense flavor), and of course, salt and pepper to taste.

The first step is to wash the spinach well under a cold running water, making sure to remove any impurities. After cleaning it, we put it in a pot of boiling water and let it cook for about 2-3 minutes, just enough to soften it and retain its vibrant color. Once boiled, we drain the spinach and let it cool slightly. This process helps to preserve the nutrients and flavors.

In a non-stick pan, we add a few tablespoons of olive oil and, over medium heat, add the garlic cloves, chopped or crushed. We let the garlic brown slightly, being careful not to burn it, as burnt garlic can give an unpleasant bitterness to the dish. The aroma of the garlic will blend perfectly with the spinach, creating a savory base.

After the garlic has taken on a golden hue, we add the boiled spinach to the pan. It is important to mix well so that all the ingredients combine harmoniously. If we notice that the mixture is too dry, we can add just a little water, just enough to give a slightly moist consistency without turning the dish into a soup.

We let the spinach sauté for about 5 minutes, stirring occasionally. During this time, the spinach will absorb the flavor of the garlic and become tastier.
