Peel the pumpkin and remove the seeds, taking care to also remove the thinner strands that can be unpleasant to taste. Once you have a clean flesh, cut the pumpkin into smaller slices, but not too small; ideally, you should cut each slice into three medium-sized pieces so that they cook evenly and retain their texture. Once you are done cutting, preheat the oven to 200 degrees Celsius, so it is ready to receive the pumpkin.

In a baking tray, place the pieces of pumpkin, making sure they are not overlapping, to allow for even cooking. Brush each piece with a drizzle of quality olive oil, which will help caramelize the pumpkin and add a rich flavor. You can sprinkle over the pumpkin a teaspoon of salt, a tablespoon of brown sugar, and a few aromatic spices, such as cinnamon, nutmeg, or even a pinch of black pepper, depending on your preferences. These spices will enhance the natural sweetness of the pumpkin and create a delicious contrast.

After seasoning the pumpkin, place the tray in the preheated oven and let it bake for about 25-30 minutes, turning the pieces halfway through to achieve even browning. You will notice how the pumpkin changes color, becoming a more intense golden hue and exuding a tempting aroma. When ready, the pumpkin should be soft but not completely disintegrated, maintaining its shape.

Once you have removed it from the oven, you can serve it immediately as a side dish alongside meat or as an appetizer, drizzled with a little balsamic vinegar or yogurt sauce for an extra touch of freshness. Alternatively, you can mash it and turn it into a creamy puree to use in various recipes or even in desserts.
